PAPOUTSAKIA (Stuffed Eggplants)

Papoutsakia means “little shoes.” Think of these as a mini lasagna in an eggplant casing. You can make this vegetarian by omitting the meat.

8 small eggplants, 5-6-in each (13-15-cm)

2 fresh tomatoes, finely chopped

½ cup finely chopped fresh parsley

½ cup olive oil

1 cup ground beef or venison

1 small onion, finely minced

½ tsp sea salt

½ tsp freshly ground black pepper

Béchamel Sauce:

¼ cup olive oil (or butter)

½ cup unbleached white flour

2 cups milk, at room temperature

1 egg, beaten

sea salt, to taste

freshly ground black pepper, to taste

½ tsp nutmeg
